Palak Paneer

Enjoy a classic Indian vegetarian dish made with Paneer. This dish is inspired by typical North Indian cuisine where Paneer is a commonly used ingredient. The dish is easy to make and is a quick evening meal for 4. Serve with a large salad or a classic Indian mango lassi.

Method

Cook the rice according to the instructions on the packet.

While that’s cooking, cut the paneer into 2 x 2 cm cubes and fry in a pan in oil until the cubes form a slight crust.

Squeeze any excess fluid out of the spinach and then blend quickly with a hand blender.

Finely chop the onion and garlic.

Heat a frying pan or saucepan with a little oil and add the onion, garlic, herbs and spices.

Sauté at high heat, then turn down to medium and add the spinach.

Add cream or milk together with the paneer and stir in well.

Season with salt, pepper and lime juice.

Serve immediately with rice and fresh coriander.
