Baked sweet potatoes with goat’s cheese and lemon
Sweet potatoes are so obliging! They can be used in everything from salads to mash and casseroles, and even make a wonderful filling in the thick, sweet American pancakes. Here the sweet potatoes are accompanied by goat’s cheese, which gives the dish a wonderful umami taste.

Method
Peel the potatoes and cut them into cubes or thin slices and turn them in the oil, lemon zest, salt and pepper.
Transfer the mixture to a baking tray lined with baking paper and bake at 200 degrees Celsius (fan-assisted ovens) for about 20 minutes.
Take out the baking tray and crumble goat’s cheese over the potatoes and sprinkle with pumpkin seeds.
Bake for a further 10 minutes.
Arrange the potatoes on a dish and season with salt and pepper.
Top with rocket and serve the salad warm, perhaps with pork.
