Grill cheese “chops” with spinach and asparagus
Give the grill cheese an extra-crispy crust with a breadcrumb coating to make a crunchy snack or appetiser. An easy recipe that is also suitable for a summer barbecue or a vegetarian dish.
Method
Cut the grill cheese into slices and turn them first in the flour, then in egg and then breadcrumbs until they are completely covered. Peel the asparagus and divide them first lengthways and then in half. Fry in oil in a frying pan until they begin to brown. Add the onion and garlic and fry, stirring until the onion is soft and clear. Add the spinach and heat through. Season with salt and pepper.
Toast the slices of bread, and distribute the spinach and asparagus on the slices. Top with the fried slices of grill cheese and drizzle with a little good-quality olive oil.
