Citrus salad with “glögg syrup” and spiced salad cheese

This Christmas’ prettiest salad! Capture the essence of pure Christmas “hygge” with this fresh citrus salad with spiced salad cheese and a “glögg syrup” filled with cinnamon, star anise, cloves and other tastes of pure Christmas.

Method

Pour the vinegar into a casserole dish with the allspice, cloves, cinnamon, star of anise and thin strips of ginger.

Allow the vinegar to simmer at low heat for 30 minutes covered.

It should only simmer and not boil.

Peel the citrus fruits with a knife and cut them into slices. Arrange on a serving dish or similar.

Drain the salad cheese, turn it in the paprika and then sprinkle over the citrus fruits.

Coarsely chop the fresh herbs (basil, mint and tarragon) and sprinkle over the salad.

Sieve through the vinegar and return to the casserole dish.

Boil until it is reduced to a syrupy consistency.

Pour over the salad and serve immediately.
