Aubergine towers with Grilling cheese

Aubergines are commonly used in vegetarian dishes because this special little vegetable can have a soft umami taste similar to meat. It is also this taste that makes it a good match for Taverna Grilling cheese in this Greek-inspired dish which tastes great all year round.

 

 

Method

First make the tzatziki: Grate the cucumber, squeeze as much liquid out of the cucumber as possible using a thin tea towel. Crush the garlic and combine the yoghurt, cucumber, garlic and lemon juice. Season with salt and leave in a cool place.

Cut the aubergines lengthways into 8 slices.

Fry in oil in a hot pan.

Allow to dry on a piece of kitchen roll.

Cut the cheese into 8 slices and fry in the pan until a golden-brown crust forms.

Remove from the pan.

Cut the tomatoes into slices.

Thread aubergine, tomato and cheese onto each skewer.

Sprinkle with basil and lemon oil and a few salt flakes and serve immediately.
