Summer salad with grilled cheese and water melon

A refreshing summertime favourite with crispy, salty cheese from the grill and juicy melon. A simple, filling and different salad ideal for both young and old.

 

 

 

Method

Cut up the melon, avocado and cucumber into small pieces.

You can use a melon baller if you have one, and make balls instead of cubes.

Add the watercress to the salad and finely chop the red onion.

Slice the grilling cheese, then fry in oil until crispy and golden in a hot pan.

Stir the cooked cheese into the salad.

Blend the ingredients for the dressing together and season.

Stir the dressing into the salad, and serve while the vegetables are crispy and fresh.
