Almond crust cheesy bites with spicy mayo

This recipe is for a delightfully crisp and tangy snack that packs an extra-spicy punch as an appetiser or as an accompaniment to a guest menu, a dinner or a starter. Also perfect for vegetarians. Great for all seasons and occasions.

 

 

Method

Start by preparing the mayonnaise: mix together all the ingredients except the lime juice, salt and pickled chilies.

Add lime juice and salt to the mayo to taste.

Cut the cheese into bite-size pieces, approx. 2 x 2 cm and 1 cm thick.

Whisk the whole egg thoroughly and pour it into a small bowl.

Pour the almond flour and wheat flour into two small bowls.

Dip the cheese bites in the wheat flour first, and shake them to remove any excess.

Then dip them in the egg and finally in the almond flour.

Heat the oil in a small pan and fry 3–4 cheesy bites at a time for approx. 1 minute until they are golden brown all over.

Place them on a piece of absorbent paper to remove any excess oil, and then spear them with cocktail sticks and serve immediately with the mayonnaise and pickled chilies.

Garnish with herb leaves if appropriate. A quick, delicious, crunchy and spicy snack!
