Indian inspired carrot salad

A wonderful mix of a classic Danish carrot salad and Indian ingredients makes this salad an especially tasty experience. Enjoy as a side to a main course or eat it as part of a salad buffet. You can adjust the strength according to taste and transform it into a main course by adding bulgur wheat or couscous.

Method

Cut the paneer into cubes and fry in a pan in a little oil until the cubes are golden.

Set to one side.

Peel the carrots and cut them into long, lengthways strips with a potato peeler.

Peel the red onion and cut it into very fine wedges.

Peel the oranges and cut them into wedges.

Add all of this into a bowl together with any excess orange juice.

Coarsely chop the parsley, add to the bowl and mix well.

Top the salad with the cubes of paneer.

Toast the cashew nuts in a dry pan until they are golden and finely chop the chilli.

Add them both to the salad.

Mix all the ingredients for the dressing and pour over the salad.

Serve immediately.
